The winery was established in 1991 when the current owner, a well-known oenologist, acquired several agricultural properties with buildings, vineyards, olive groves, pastures and forests in the municipality of Greve in Chianti. This led to the creation of an initial enterprise, which was expanded in 1996 to a total area of approximately 33 ha with the following crops:

- Vineyard 14.9 ha
- Olive groves 3.6 ha
- Forest 7.3 ha
- Buildings and fallow land 7.8 ha

The town of Greve in Chianti takes its name from the small river Greve, whose sources are located in the hills above the small medieval village of Ruffoli, one of the most important historical centres of the Chianti Classico wine-growing area. The west-facing slope (350 to 550 m.a.s.l.) of the Greve Valley between Greve and the district of Panzano is unanimously considered one of the best locations for growing vines and olive trees. This is where the magnificent wines of the Chianti Classico area of the highest quality and the wonderful extra virgin olive oil are produced. This area is home to the vineyards and olive groves of this winery, whose name refers to the nature of the slopes, which are characterised above all by classic dry stone walls. Sangiovese vines grew there, consisting mainly of the clone of the famous ‘Sangiovese di Lamole’.

The vineyards were gradually replanted between 2005 and 2015 using highly innovative criteria based on the selection of clones that were the result of experiments and territorial testing.

The planting distances of 2 m between rows and 0.70 m within rows result in a planting density of 7,142 vines/ha.

As early as 1992, the owner decided to turn a considerable part of the production into one of the great ‘Super Tuscans’. In addition to a Chianti Classico DOCG and a white wine (Chardonnay), two further Super Tuscans were created as pure Merlot and a cru consisting of 25% Cabernet Franc, Cabernet Sauvignon, Merlot and Petit Verdot each.

The 2024 grape harvest yielded approximately 100,000 kg, from which over 600 hl of Chianti Classico and 100 hl of Super Tuscan IGT were pressed.
