From our vineyards you can obtain, following the dictates of the disciplinary, approx.:

These quantities can almost be doubled by buying grapes and yet remain with farm land-register tax values.

We would also like to underline that potentially thanks to existing space and equipment and with a modest investments(buying barrels), the winery can easily reach the production of over 500,000 bottles/ year.

THE WINERY
The two-story building that houses the winery was completed in 2011 and covers a total area of about 1350m². One of the two floors is completely under ground, in order to exploit the thermal inertia of the subsoil and in this regard, along the entire perimeter, an aerated interspace in reinforced concrete was built to optimize the thermal insulation. This level in fact is used for the primary processing, from winemaking to storage as well as ageing, which takes place in a large “barriccaia” with air conditioning managed by a computerized system.
The other floor, located at ground floor level, is intended for bottling and storage of finished products. At this level there is also a room used as kitchen, a tasting room with access to a solar terrace overlooking the vineyards, at this level there are also two rooms for offices, a warehouse used as storage for the bottles and a large local with a drying machine that can be programmed for drying the grapes equipped. Also these last two locals are thermoregulated.
The flat roof, to which you access via an elevator, is a terrace that opens onto the vineyards and the surrounding countryside. The building is surrounded by squares, totally about 3000m², which make the structure easy to access and convenient for all operations and transports.
The winemaking takes place entirely by gravity, with the grapes that are sent to the fermenters through openings that are located in the porch on the upper floor without the aid of pumps, this ensures a delicate process that enhances the organoleptic qualities of the wines.
Maceration equipment Trecieffe, company from Treviso, which also has supplied with truncated conical fermenters LEM, thermo conditioned with a fulling system, i.e. overturning and sinking of the marc cap.
Technology described above, despite having advanced technical characteristics, respect the ancient tradition of winemaking.(Technique used by Wineries that produce wines of highest quality )
The thermal power and plumbing and heating system together with the enological connections were supplied by the company Sordato from Verona (one of the leading companies in enotechnician thermo-/plumbing sector) everything with computerized remote control.
The winery still needs some external finish such as painting, fences, refining of gardens and some some accessories (like set-up of kitchen, tasting room etc.)
